KETO CARROT CAKE WITH CREAM CHEESE FROSTING

⁠If we had to name our favourite non-keto dessert, Carrot Cake would always win.
Carrot Cake! Moist, soft, and fluffy with flavor. This simple homemade carrot cake is a quick and easy recipe. All you’ll need is patience for the bake and cooling time. I hope you enjoy this recipe. Lots of love, Stephanie and Cloud.

Keto carrot cake

Ingredients:

1.5 cups almond flour
1 can coconut cream
2 eggs
1/2 cups sweetener
1.5 cups grated carrot
1/2 cup chopped walnuts
3 tsp cinnamon
2 tsp ginger
3 tsp mixed spice
2 tsp nutmeg

Combine all your ingredients in a mixer and mix well, you won’t taste the coconut at all in this cake but it does make is sooooo moist! Pour into a lined loaf tin and bake for 1 hour @ 180.

Allow to cool and ice with your fave cream cheese frosting!.

Frosting:⁠

400g cream cheese
180ml heavy cream⁠
90g powdered erythritol⁠
1/4 tsp stevia powder (or monk fruit powder)⁠
1 vanilla bean (or vanilla essence)⁠.
